Café de Olla (Panamanian Style):
Pour Over (Brew Time 4-6min):
- 25 grams of Medium fine to medium coarse coffee grounds
- Prep filter by placing in pour over device and wetting filter with hot water. Allow all water to drip from filter, then discard water.
- Add coffee grounds to damp filter
- Saturate 50g of 200° F water onto grounds throughly
- Let this first 50g of water bloom the coffee for 30 seconds
- Continue to pour 350g of water, saturating the grounds for another 3-5 minutes.
- Allow coffee to drip slowly
Pour and enjoy!
French Press (Brew Time 4 min)
- Rinse french press with hot water, then discard water. Place pot on scale
- Add 36 grams of fresh coffee grounds to french press pot
- Start timer and saturate coffee with 540 grams of water
- Place lid on pot, will press later
- After 2 minutes remove lid and gently stir grounds. Remove oils and extra floating grounds with spoon
- Add another 120 grams of water then place lid back onto pot
- Slowly press down french press lid at 4 minutes, plunger should be at the bottom
